This is how to make simple almond blondie for a morning or afternoon treat that actually makes you feel like you just gave your family something nutritious. I can not believe how good this tastes and it is full of natural ingredients.

I like giving my children a snack with ingredients they might not otherwise consider eating. In fact, the first time they ever tried almond blondie and liked it I was surprised.

So here is a simple recipe for simple living. You do not need a mixing bowl and the blondies are easy to make in a blender. Sometimes I just need an easy recipe that keeps my day simple and everyone fed. I had to buy a few extra ingredients the first time I made these. I now keep these ingredients all the time as they are so good for you and the blondies are simple to make.

The Ingredients for Simple Almond Blondie
The liquid from the can of chickpeas is called aquafaba (water from beans) and is a great substitute for eggs or egg whites. It is one of the reasons why this recipe works as a vegan recipe. You really do not need eggs to make this blondie work. You will be surprised that they are made with chickpeas and still a sweet treat. If I do not have maple syrup then I use all the liquid from the can of chick peas with half a cup of brown sugar.

I am always looking for gluten free snacks, even better if the snacks do not need gluten free flour. I have left out the tapioca flour for a slightly gooey-er brownie and this worked well.

The blondies are a success at the cottage. I liked the taste of the raw mixture before baking and was sure it would turn out well. The blondies are soft and gooey, with a salted chocolate chip flavour.
I have made the blondies with white chocolate chips, dairy free chocolate chips, grated chocolate and milk and dark chocolate chips. The milk and dark chocolate chips are the most popular, they somehow add to make this a richer tasting snack.
The Equipment
A stick or immersion blender actually works really well for this recipe. I think it may be easier to use but my immersion blender recently stopped working so I have been using the regular blender.

I have used a square baking tin to make 16 squares of blondie for a traditional look. This time I used a round cake tin and still cut the blondie into square shapes. Triangular slices might look good too. As this is a simple recipe and you can be flexible with how you use it. It is also delicious and full of good nutrition.

Gluten Free Chocolate Chip Almond Blondie

Super soft, gooey, almond blondie made with chickpeas and chocolate chips so that it is vegan, gluten free, high in protein and rich in fibre and vitamin C.
Ingredients
- 1 can of chickpeas including half the liquid
- 1/2 cup of maple syrup
- 1 tsp vanilla essence
- 1/3 cup almond butter
- 5 Tbsp almond flour (or plain wheat flour)
- 2 Tbsp tapioca flour (optional)
- 1/4 tsp salt
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1/2 cup chocolate chips
Instructions
- Preheat the oven to 180C on fan bake. Line a 24cmx24cm baking dish with baking parchment.
- Put the chickpeas with liquid, maple syrup, and vanilla essence into a blender or food processor and mix.
- Add the almond butter, almond flour, salt, baking powder, baking soda and blend together until smooth.
- Fold the chocolate chips into the smooth mixture.
- Pour the mixture into the baking dish and bake for 20 minutes or until it starts to turn golden.
- Remove the blondie from the dish and let it cool for 10 minutes before cutting it into squares.
- Store the blondie in an airtight container in the pantry or refrigerator.
Notes
You can sprinkle extra chocolate chips on top of the blondie before baking.
